Cheesy Potatoes with Smoked Sausage and Peppers

Another meal I threw together to make a filling dish.

Cheesy Potatoes with smoked sausage and peppers

Ingredients

  • 2 bag Bob Evens diced potatoes (found in dairy isle by eggs)
  • 1 1/2 8 oz bags of finely shredded Cheddar cheese
  • 1 large onion
  • 1 bag of frozen stir fry peppers
  • 2 pkg. of skinless smoked sausage
  • garlic powder, salt & pepper

Method

  1. In pan, add oil, potatoes and onion. Fry potatoes to golden brown Add garlic powder, salt and pepper. Add 1 bag of cheese and mix well
  2. In another pan add oil, sliced smoked sausage and cook till brown. Add peppers & mix well. Cook together till peppers are done. Add seasonings
  3. Combine potatoes and pepper and sausage all together. Mix well. Add the remaining 1/2 bag of cheese to mix.Mix well. Cook 10 minutes more
  4. Serve with corn ( or other veggies) and Crescent rolls
