Chef Lauren’s Osso Bucco
A controversial meat meets its match with a combination of savory flavors that will delight the palate as well as the tummy.
Ingredients
- 4 Veal Shanks
- 1 cup shredded carrots
- 1 cup chopped celery
- 2 garlic cloves, minced
- 1 can diced tomato, keep juice
- 1 can beef broth
- 1 cup dry white wine
- parsley for garnish
- 1 large white onion diced
- 2 tbsp Olive oil
- 1 tsp white pepper
Method
1) In a saute pan, add oil and bring to medium heat. Mark each side of the veal for 2 minutes on each side and then place each in a baking dish for the oven.
2) Add the carrots, onion, celery, and garlic to the saute pan and cook for 5-7 minutes until tender.
3) Add the dry white wine, tomato, broth; bring to a boil and simmer for 5 minutes.
4) Pour over veal and bake uncovered at 350 Degrees for 1 hour and 25 minutes.
5) Sprinkle with parsley and sauce mixture.
Note:
If you prefer to replace the the veal with pork or chicken, you can follow the recipes as follows. Just remember to adjust cooking times depending on the weight of the meat.

You can replace the meat with soy meat, vegetables like yucca, or eggplant is another idea
