Cody Cowgirl Casserole

Vegetable oil or nonstick cooking spray
1 lb. bulk sausage, browned & drained
1/2 lb. bacon, cooked, drained & crumbled
12 oz. frozen hash brown potatoes
1 med. green bell pepper, chopped
2 tbsp. chopped green onions
2 c. shredded Cheddar or Monterey cheese, divided
1 c. reduced-fat Bisquick
3 c. 2% reduced-fat milk
1/4 tsp. salt
4 eggs
1. Oil a 13X9″ glass baking dish or spray it w/ cooking spray.
2. Combine sausage, bacon, hash browns, bell pepper, green onions, & 1 c. cheese in a lg. bowl. Spread in baking pan.
3. Whisk together Bisquick, milk, salt & eggs til well blended. Pour over potato mixture. Sprinkle w/ remaining cheese. Cover & refrigerate overnight (no longer than 24 hrs.).
The Next Day
4. Preheat oven to 375 deg. F. Remove dish from refrigerator.
5. Bake, uncovered, 30-35 min., til light golden brown around the edges. Let stand 10 min. before serving. Serves 12.
