Coke Soaked Pork Loin

A great way to cook pork loin indoors or out.

You may find the idea of coke and pork loin a little strange to say the least I know I did but after tasting it for the first time I am now completely hooked. There are different ways to cook this dish but the way I like best is on skewers or as kebabs served with rice or french fries whatever your taste buds demand. The key to this dish like many others is preparation get that right and the cooking is easy leaving you and your guests with a delightful meal,yes you will want to share it.

To prepare for this dish get your pork loin and cut into one inch thick strips and put to one side whist you prepare the marinade. The marinade is the most important aspect of this dish it will make sure your meat remains moist and deliscious after cooking. The ingredients you need are as follows.

Ingredients

One can of full fat coke definitely not diet coke.

One large onion

Two lemons

Two or three cloves of garlic crushed

Fresh or dried chili flakes to taste.

Two teapoons of Worcester sauce

A small glass of dark rum.

A good pinch of salt and pepper.

Method

In a good sized bowl pour your coke and add one of the lemons including rind cut up, the other lemon just its juice. Crush and chop your garlic,small dice your onion and add to the mix. Now some people will prefer dried chili flakes to fresh chilli’s its up to you either sprinkle two or three teaspoons of flakes or whatever fresh chilli’s you have cut up very small then add your rum and Worcester sauce and other seasoning. Now give your mixture a good mix and add your strips of pork loin cover with cling-film and put in refrigerator overnight or for at least eight hours. When you are ready to cook skewer your meat on either metal or wooden skewers if you are using wood soak in water for a while as it helps to stop them burning.

Cooking

There are various way of cooking the meat but the one I prefer is to grill it over a charcoal barbecue if you have a rotisserie attachment great if not turn your skewers often to get even cooking. The important thing to do is have a pastry brush and keep on applying the left over marinade to the meat as it cooks. The basting of the meat helps keep it from drying out and getting tough and also keeps adding flavour. When done the meat should be a succulent dark brown colour not black then it is burnt. Serve with a good salad rice or even french fries it goes well with all these.
