Creamy Arabian Lamb

This creamy dish is the favorite of Arabic people, wherein the lamb meat must be mixed with milk, pasta and vegetables. You can mix and match meat and vegetables of your choice, as long as the result is a creamy one.

 

Combination of different vegetables, macaroni, milk and lean lamb cutlets makes this recipe a delicious one. Try substituting lamb with beef or chicken.

 

Ingredients:

 

2 cans (170 gms) Full cream evaporated milk

1 ¼ cup peeled carrots, cubes or cut into round slices

1 cup string runner bean, cut into 2 cm each

½ kg. lean lamb or (beef or chicken), cut into cubes

1 tbsp crushed garlic

1 tbsp ground ginger

1 tbsp green chilies, seeded and chopped

1 cup water

2 tbsp oil

Salt to taste

2 cups frozen peas, thawed

½ cup elbow macaroni, cooked “al dente”

Garnish:

 

¼ cup parsley, finely chopped

200 gms elbow macaroni, cooked

 

Method:

 

  1. Cooked carrots and runner beans separately in salted water. Drain. Keep aside.
  2. Combine 1 can of evaporated milk, lamb, garlic, ginger, green chilies, salt and water in a medium sized pan. Cook, covered on low heat until lamb is tender. Dry the liquid if any, on medium heat, stirring constantly.
  3. Add oil.  Fry lamb for 3 minutes on medium low heat, stirring constantly.
  4. Add 1 can evaporated milk, peas, cooked macaroni, carrots and beans. Stir. Simmer, uncovered on low heat for 7 minutes, stirring occasionally.  Garnish. Serve hot.
  5. Serves 4
