Diced Pork in Tomato Sauce (Menudo)

Hi, everyone, I would like to share with you this one of my favorite Filipino food.This is easy to prepare dish is ideal for weekly dinner.

Ingredients:

2 tablespoons cooking oil

1 small onion chopped

1 tablespoon chopped garlic

1 kg (2 lb) pork shoulder, 1/4( pork liver optional) cut into (1/2 -in) pieces

1 large potato, cubed

2 medium carrots, cubed

250 ml (1 cup) water

500 ml (2 cups) canned tomato sauce

2 tablespoon soy sauce

2 tablespoon calamansi or lemon juice

Procedure:

1. Heat cooking oil in a large frying pan and saute onion about 1 minute. Add garlic and saute a further 1 minute.

2. Add pork and liver and stir to brown their pieces evenly. Add cubed potatoes and carrots and stir to mix.

3. Pour water and simmer for about 15 minutes. Blend into tomato sauce, soy sauce and lemon juice. Stir to combine mixture well.

4. Bring to the boil, then immediately lower heat. Let simmer until pork and liver is thoroughly cooked and potatoes and carrots are tender, about 15 minutes.

5. Serve it with rice or bread.

    Gave this recipe a few twists, all worth it. I used pork liver pate instead of cubed liver, and put it in after the pork cubes were simmering in tomato sauce, soy sauce, and lemon juice. I added in sliced hotdog as well. I also dropped in1/2 pork cube. The result was the kind of Pork Menudo that I used to taste in handaans in the Philippines, something I’ve been trying to achieve since time immemorial! Try it, you just might like it!
