Easy Carve Pork Roast

The trick with any roast lies in its seasoning and cooking procedures. Learn how to get this fundamental principle under control.

Pork roasts have long been a favorite (banquets, barbeques, dinner parties etc.) yet very rarely tried. Part of the problem lies in the general perception of what a pork roast is and how long it takes to make. In the “real” world however; a succulent, easy carve pork roast can; as outlined below, be put together in next to no time flat. Here is how!!!!!

Ingredients

  • 1 Kg (about 2.2 Pounds) Easy Carve Boneless Pork Roast
  • 110 Grams of Finely Diced Blanched Almonds
  • 1 Bunch of Parsley
  • 2 Teaspoons of Dijon Mustard
  • 1 Teaspoon of Minced Garlic
  • 1 Teaspoon of Olive Oil
  • 1 Pinch of Cinnamon
  • Freshly Ground Sea Salt (primary seasoning)
  • Freshly Ground Black Pepper (primary seasoning)
  • Aluminum Foil (if needed to cover roasting pan while roasting)

Method

Seasoning

  1. Wash trim and finely dice the parsley leaves
  2. If your blanched almonds are not finely diced then finely dice them now
  3. If you need to peel, trim, rinse and mince the garlic then do so now
  4. To a small mixing bowl add the olive oil, minced garlic, Dijon mustard and cinnamon.
  5. Give these ingredients a quick stir
  6. Now add the remaining seasoning ingredients (the finely diced blanched almonds and the finely diced parsley leaves) and stir well to ensure that all ingredients are well and truly thoroughly combined (ingredients should be evenly distributed throughout this press seasoning).

Pork Roast

  1. Preheat oven to 180 degrees C. (160 degrees C. for a fan forced oven)
  2. Firstly unpack your pork roast, remove the rind and then give both rind and the roast itself a quick rinse. Once your roast has been rinsed (rinse water running clear) place it onto a drying rack or into a colander to drain.

Salt and Pepper

  1. Once the easy carve pork roast has drained to requirements place it onto a rack/plate and rub some freshly ground sea salt as well as the freshly ground black pepper into the easy carve pork roast with rind removed.
  2. At this point let the salt and pepper seasoned easy carve pork roast sit for around 5 to 10 minutes.

Oiling Your Roasting Pan

While the easy carve pork roast rests brush bottom of roasting pan with olive oil (use a non-stick cooking spray if you wish). I usually opt to use olive oil or dripping as they tend to produce more consistent and flavorsome end result (and after all; it’s the tasty end result that we and our taste buds are most interested in).

Press Seasoning

  1. Plaster the easy carve pork roast with seasoning mixture. Add teaspoonful/tablespoonful sized dollops of seasoning mixture to the easy carve pork roast and then use the backside of a teaspoon or tablespoon to spread seasoning mixture over meat. Continue adding and spreading the seasoning until the entire surface of the meat is more or less evenly coated with it.
  2. With an even coating of seasoning cover all of the easy carve pork roast we must now press it into the meat. Bear in mind that best results are achieved when using the backside of a teaspoon or tablespoon.
  3. Add, spread and press more seasoning into meat as required
  4. Transfer press seasoned easy carve pork roast to a roasting pan.
  5. Roast with lid on for around 40 minutes after which remove the roasting pans lid and continuing roasting until seasoning crust takes on a golden hue (around 25 minutes).

Note: If you are using a roasting pan that has its own custom fitting lid then you will probably get away with omitting the aluminum foil all together.

Note: Patting the rinsed pork roast with paper towels will speed up the drying process but do take care not to overly dry your pork roast.

Note: If you desire to have pork crackling then all you will need to do is to return the rind to its original position on the pork roast but only after the pork meat itself has been adequately seasoned but prior to wrapping in aluminum foil.

Serving

  • Tip: Rest the cooked easy carve pork roast for at least 10 minutes prior to carving
  • Serve this easy carve pork roast with your selection of roast vegetables (potatoes, pumpkin, parsnip, onions, carrots, sweet potatoes etc.), boiled/steamed vegetables such as peas, corn kernels etc.), corn on the cob, gravy and apple sauce.

Yield: Serves 4 to 6 adult sized serving portions
