Spicy Red Chicken Curry – Easy to Cook.

Easy to Cook Chicken Curry

When cooking everyday, one needs recipes that don’t take eternity in preparing and cooking. This is a recipe I came up with while in the kitchen wondering how to make something that was not the regular day fare and still did not consume time.

Preparation Time: 15 minutes

Cooking Time: 25 minutes

Ingredients:

  • 1 kg Chicken 
  • 30 gm ginger – Finely Sliced
  • 3 medium sized Onions – Finely Sliced
  • 3 medium sized Tomatoes – Sliced
  • 8-10 Red Chillies
  • 1 tsp Coriander Powder
  • 2 tsp Red Chilly Powder
  • Oil
  • Salt to Taste
  • Coriander leaves (or cilantro) – finely chopped

(NOTE: Adjust red chillies as per taste – this quantity makes the dish medium spicy)

Method:

  • Heat oil
  • Add ginger – fry for 1 minute
  • Add red chillies – fry for 15 seconds
  • Add onions and fry till light brown
  • Add tomatoes, coriander powder, red chilly powder and salt
  • Fry till the oil is released
  • Add the chicken and cook for 5 minutes (put a lid on)
  • Add water, mix well and cover
  • Cook till Chicken is done
  • Garnish with coriander leaves and serve hot with rice or bread
