Spicy Red Chicken Curry – Easy to Cook.
Easy to Cook Chicken Curry
When cooking everyday, one needs recipes that don’t take eternity in preparing and cooking. This is a recipe I came up with while in the kitchen wondering how to make something that was not the regular day fare and still did not consume time.
Preparation Time: 15 minutes
Cooking Time: 25 minutes
Ingredients:
- 1 kg Chicken
- 30 gm ginger – Finely Sliced
- 3 medium sized Onions – Finely Sliced
- 3 medium sized Tomatoes – Sliced
- 8-10 Red Chillies
- 1 tsp Coriander Powder
- 2 tsp Red Chilly Powder
- Oil
- Salt to Taste
- Coriander leaves (or cilantro) – finely chopped
(NOTE: Adjust red chillies as per taste – this quantity makes the dish medium spicy)
Method:
- Heat oil
- Add ginger – fry for 1 minute
- Add red chillies – fry for 15 seconds
- Add onions and fry till light brown
- Add tomatoes, coriander powder, red chilly powder and salt
- Fry till the oil is released
- Add the chicken and cook for 5 minutes (put a lid on)
- Add water, mix well and cover
- Cook till Chicken is done
- Garnish with coriander leaves and serve hot with rice or bread
