Easy One-Pan Rack of Lamb

RECIPE:
2 tablespoons chopped Greek basil
2 tablespoons chopped parsley
2 cloves garlic, crushed
3 tablespoons olive oil
2 red onions, cut into wedges
2 red and yellow peppers, sliced
2 racks o lamb (about 14 cutlets)
100ml of white wine
Half a jar of mixed olives
salt and freshly ground pepper
