Easy One-Pan Rack of Lamb

This gorgeous and delightful Mediterranean flavoured dish oozes as we put sweet and tender lamb at its best for meat lovers everywhere to enjoy…

This dish is ready in 40 minutes + resting time.

RECIPE:

2 tablespoons chopped Greek basil

2 tablespoons chopped parsley

2 cloves garlic, crushed

3 tablespoons olive oil

2 red onions, cut into wedges

2 red and yellow peppers, sliced

2 racks o lamb (about 14 cutlets)

100ml of white wine

Half a jar of mixed olives

salt and freshly ground pepper

1. Heat the oven to gas mark 6/ 200 degrees Cent. Mix the herbs and garlic with 2 tablespoons of the olive oil and salt and pepper. Put onion and peppers in a roasting tin, toss the remaining oil and roast for 15 minutes. Heat a pan and fry the lamb, skin side down, for five minutes until brown. Remove and rub the herbs onto the lamb.

2. Put the lamb on top of the onion and peppers, and roast for 10 minutes. Pour over the wine, add olives and cook for 10 to 15 minutes, depending how you like it cooked.

3. Rest the lamb before serving.
