The Ingredients:
4 pig knuckles ( pig legs)
2 pounds sauerkraut (fine shredded cabbage)
1 tablespoon caraway seeds
4 cloves
2 onions
3 cups dry white wine
8 small potatoes, peeled
4 knockwurst (thick frankfurters)
Method:
Pour boiling water over the pig knuckles, scrub with a brush, and scape with a knife. Wash under cold water and dry.
In an oven or heavy sauce pan, make layers of sauerkrauts, sprinkled with caraway seeds, and the pigknuckles. Stick the cloves into the onions, and add with the wine. If liquid doesn’t cover the ingredients, add more wine or water. Cover, bring to boil, and cook over low heat for 3 hours or until knuckles are almost tender. Add the potatoes and knockwurst. Recover and cook 30 minutes longer.
