Fillet Steak Meal

I like this one, because it is similar to how you would expect to have it served to you in a restaurant. Just add a Belgian beer or fine South African red wine. There are three parts to it. no1 is the Chips, no2 is the Sauce and no3 is the steak.

I am going to explain this for one steak, but all you do is double the original per person. So nice and easy.

  • Fillet steak (supermarket cut is standard size and weight)
  • Two large potatoes peeled
  • Cherry tomatoes (about 5-8)
  • Hand full of mange tout
  • Black pepper
  • Flour
  • Milk
  • Salt
  • Oil
  • Soy sauce
  • Butter

The first step is going to be the cooking of the chips. I like to make it myself because I like the pom frites in Belgium and Continental Europe. But you can skip this step if you want to use oven chips for diet or hassle.

  1. Chop your two large peeled potatoes into thin slices. You should get 1 1/2 handfulls of chip shaped potatoes.
  2. In a wok, heat about 1cm of oil until boiling hot.
  3. With a splash-guard, add the potatoes and allow to cook for about 5 minutes and then stir gently so that the oil doesn’t splash up.
  4. Repeat the process until the chips are all about 50% brown or to taste.
  5. It is important to note, that these aren’t conventionally pretty looking chips, but cook quickly because they are thin.
  6. Pre heat oven to 200Celsius.
  7. Pour chips without oil into a baking tray.
  8. Add your cherry tomatoes and mange touts.
  9. Add about 1 teaspoon or salt and pepper over the whole mix and cook in preheated oven for about 15minutes.

Now for the pepper sauce:

  1. Add a cup of milk to a cold saucepan.
  2. Add about 100 grams of butter and turn on medium heat.
  3. While this heats up, crush a fist full of black pepper. If you use coarse black pepper, simply add 1 1/2 tablespoons.
  4. Stir the sauce constantly and add the pepper and a teaspoon of salt.
  5. Add two tablespoons of normal baking flour.
  6. Stir well so that it doesn’t clump.
  7. Add a drop of soy sauce to get the darker colour.
  8. Turn the heat low and stir until it gets thicker.
  9. This should take about 5-7 minutes.

Now the best part, the steak:

  1. Add a little salt (to taste) and pepper (to taste) on both sides of the fillet.
  2. On a steak pan or even in a wok (has to be non-stick) add a tine drop of oil.
  3. Brown the steak for 5 minutes on each side and then take it off of the heat.
  4. Grab the baking tray with the chips etc. in and add the steak on top. Cook it all together for about 5 minutes on 200Celsius.

To serve:

  1. Place the steak on a plate, with the chips and veggies around.
  2. Add the pepper sauce over the steak and the chips.

Simple as that. Takes about 30 minutes in total. And makes a medium-cooked steak. A Belgian fruit beer brings out the taste quite nicely, so have that as a beverage if you don’t feel like the more conventional red wine option. But always good with a Merlot. Enjoy!
