Frugal Recipes: Chip Beef on Toast

Easy and economical.

Ingredients

3 tbsp. butter
3 tbsp. onion, sautéed (optional)
1/4 lb. chip beef (I used Carl Budding type Beef)
3 tbsp. flour (to thicken)
2 c. hot milk

Preparation

Melt butter, add flour, blend. Add milk until almost thick. Add chip beef. Serve on toast.

This is an old stand by recipe for both my Grandma and Mom. I thought about it the other day and thought I would give it a try.

I thought it was a simple recipe and didn’t require much skill. The biggest thing to remember is melt your butter on low heat and then add the flour all at once to make a roux. Turn the heat to medium high. Then add the milk a little at a time giving each turn a chance to thicken up.
Besides being easy it is very economical. I was able to get the beef for $2.00 and the rest of the ingredients you all ready have around the house.
