Garlic-Herb Marinade for Grilling

You will find this to be a highly seasoned oil. It is great for brushing on vegetables, fish, poultry, or pork right before grilling or broiling.

Ingredients

  • 1 cup extra-virgin olive oil
  • 1 tablespoon finely minced fresh rosemary leaves
  • 1 tablespoon finely minced fresh thyme leaves
  • 1 tablespoon finely minced fresh oregano leaves
  • Peeled cloves from an entire 1 1/2-ounce head of garlic, approximately 12 cloves, left whole

Method 

Combine all ingredients and let sit at room temperature for at least 3 hours before using.

(If fresh herbs are not available, dried can be substituted. Use half the amount of each herb if you use dried)

    Dear luv2, This sounds fantastic! I often grill with just olive oil and garlic, and adding the additional herbs is a great idea. We grow oriental eggplant (the long slender kind) in our garden, and they are wonderful on the grill. They’ll be even better with your marinade. Thanks much!
