Gena’s Sweet Grilled Pork Balls on Skewers (Nem Nuong)

Gena’s Sweet Grilled Pork Balls on Skewers (Nem Nuong) is made from minced pork and seasonings. These meat balls are good to eat either hot from the grill or cooled to room temperature, and are very versatile to use as you can eat it as a wrap or in bread rolls or with salads. I personally Prefer to cook this on a charcoal barbecue.

Ingredients

  • 1 kilo Finely minced pork     (I personally prefer to use lean mince pork meat)
  • 2 teaspoon of Cracked Pepper
  • 4 Garlic cloves, finely minced
  • 4  tablespoons Golden caster sugar  or just plain white sugar
  • 1/ 2 teaspoon of salt
  • 3 teaspoons Corn flour
  • 2 1/2 tablespoons Vietnamese fish sauce

Method:

  1. Put all the dry ingredients into a bowl and mix altogether.
  2. Then mix the dry ingredients with the minced pork and mix thoroughly
  3. Cover and leave to marinade overnight in the refrigerator ) as you want the mixture to soak in all the wonderful flavours)
  4. Soak about 16 bamboo skewers in water for about 15 to 20 minutes,
  5. Wet your hands with cold water so the meat doesn’t stick to your hands.
  6. Using your hands, form the mixture into 30 balls. Skewer 3 to 4 meat balls onto each bamboo skewer
  7. Drizzlea bit of oil over the meatballs so it doesnt stick
  8. Cook the pork skewers under a preheated grill for about 10 minutes, turning them frequently.  But  I personally prefer to cook this over a charcoal grill or BBQ as it tastes divine and more fragrant
  9. To eat, remove the meat from the skewers wrap it up in salad leaves or you can eat this in bread rolls with some nice salads, and mix it with any preferred sauce. Or you can just eat it off the stick. Or you can you this in a spring rolls wrap style and drip it in Hoisin Peanut Dipping sauce

   

Hoisin Peanut Dipping Sauce Recipe

1 cup (8 oz) hoisin sauce (if sauce is thick, add about 1/4 cup warm water to reach desired consistency)
1/4 cup crunchy peanut butter (gives it more of a crunch- if you like just a smooth texture then use the smooth peanut butter)
1 Tbs rice vinegar (optional for an extra tang)
2 garlic, crushed (exempt it if you don’t like the garlic taste)
1 minced chilli, or more for desired spiciness

Method: In a small saucepan, bring all the ingredients together and stir in till it simmers, stirring constantly until all is combined smoothly. If it is too thick, continue to add some more water, little by little until desired consistency.
