Ginger Beef Satay

Ginger marinated beef satay skewers make for great party finger food.

Food on a stick is always a crowd-pleasure as well as the dish washer’s favorite (very little to clean up). Making your cooking stand out from the mob is oh so simple and easy to achieve through the infusion of exotic flavors derived courtesy of the inclusion of ginger. No doubt about it; this ginger marinade certainly imparts some spicy variation to the standard beef satay skewers that one is so often dished up.

Ingredients

  • 3 Pounds (approximately 1½ kilograms) of Beef Top Round Steak or Beef Flank Steak

Ginger Marinade

  • 8 Cloves of Garlic
  • ½ Cup of Fish Sauce
  • ½ Cup of Soy Sauce
  • 2½ Tablespoons of Curry Powder
  • 2 Tablespoons of Honey
  • 4 Teaspoons of Ginger
  • 2 Teaspoons of Olive Oil
  • 1 Teaspoon of Crushed Red Pepper Flakes

Utensils

  • 8 Inch Bamboo Skewers (as needed)
  • 1 Zip Lock Bag

Method

  1. Soak the skewers in water while you prepare the marinade.
  2. Cut the steak into 1 inch wide, 5 inch long thin strips
  3. Chop ginger very fine
  4. Peel and mince the garlic (a garlic press is probably the easiest way to make your own fresh minced garlic)
  5. Add the fish sauce, the soy sauce and the olive oil to the zip lock bag, seal and shake gently to combine (we don’t want the sauces to become frothy as this will interfere with the manner in which the dry ingredients will combine with the liquid ones).
  6. Next up add all of the dry ingredients to the sauce mixture. Reseal zip lock bag and shake gently to combine.
  7. With the marinade prepared simply add the beef to the zip lock bag. Reseal the bag shake gently to evenly coat the beef strips in marinade.
  8. Let the beef strips and marinade mixture stand to marinate for at least 30 minutes. I generally pop the zip lock bag containing the beef strips and marinade into the refrigerator to marinate overnight. Which way you go is up to you.
  9. Once the beef is marinated to your satisfaction begin to thread the beef strips onto the soaked bamboo skewers (only thread one or two marinated beef strips per skewer as overcrowding of the skewers greatly reduces the degree of control to finesse the texture, flavor and doneness of the meat).
  10. Grill or broil the beef skewers for around 3 to 5 minutes per side depending upon the method of cooking you have chosen as well as the specifics of your appliance. I generally cook them on the barbeque or George Foreman grill.

Serving

Best served warm with dipping sauce but still goes down well cold (especially as a sandwich or roll filling)

Try serving on a bed of rice, some veggies and/or with peanut butter dunking sauce

You may prefer to make the marinade in a mixing bowl, add the beef and then toss to cover the beef strips with marinade. Myself; I find the zip lock bag method to be the quickest and so that’s the way I go.
