Gohst Masala (Mutton Curry with Potatoes)

5 Cloves Garlic, 25g Ginger, Whole Spice , 2 Stalks curry leaves, 4 Cloves, 4 Cardamom, 1 Stick Cinnamon, 2 Star anise, 200g Onions Sliced, Curry Powder Mixture, 80g Curry Powder, 5g Turmeric, 5g Chilli powder, Salt, 750g Lamb,lean,cubed, 125mls Coconut milk, 100g Tomatoes,quartered, 200g Potatoes.

1. Blend or pound garlic and ginger into fine pasre. ,2. Cut lamb into 20mm cubes., 3. Heat oil add in whole spice then curry leaves followed by onions. Brown onions and add blended garlic and ginger until aromatic.

Add curry powder mixture and cook for 5 minutes. Add lamb, stir well and leave to cook for 30 minutes. Add potatoes allow to cook for further 15 minutes. Add tomatoes and coconut milk and cook until tender.

This should serve 3 people.
