Hoisin and Coriander Glazed Leg of Lamb

EASY / PREPARE AHEAD
150ml (1/4pt) hoisin sauce
25g (1oz) fresh coriander leaves, finely chopped
juice 1 lemon
1 lamb leg, bone in, about 900g (2lb)
1 Preheat the oven to 180 C, 160 С fan, 350 F, gas 4. Mix together the hoisin, coriander and lemon juice and season with pepper. Using a sharp knife, slash the lamb leg on top in various places, sprinkle over some rock salt and brush some of the glaze on thickly. You can leave the glazed lamb covered in the fridge for up to 6 hours. When ready to make, cook in the oven for about 1 hour, basting with the remaining glaze every 20 minutes or so.
2 Remove the lamb from the oven, baste it with the thick glaze again and transfer to a hot barbecue for another 15 to 20 minutes, turning it every so often, so it chars evenly. Allow to rest for 15 minutes before slicing and serving.
