Ingredients
3-4 Tablespoons of Fresh Bacon Fat
4-5 Idaho Potatoes, thinly sliced
3-4 Sliced of Bacon, diced
1 Sweet Onion, thinly sliced
Salt and Freshly Ground Black Pepper, to taste
Fresh Parsley, chopped (for garnish)
Directions
In a Heavy Iron Skillet, heat Bacon Fat. Add Potatoes, Bacon and Onion and Cook Covered (medium heat) 10-15 minutes. *cooking hint: Shake Pan while potatoes are cooking to prevent bacon and onions from burning. Turn the potatoes several times with spatula. Remove cover and continue cooking until potatoes are golden brown, about 10-12 minutes. Sprinkle with salt, freshly ground black pepper and parsley.
