Homemade Corned Beef Hash
You may never eat canned again.
Ingredients
- 1/2 lb corned beef/chopped or diced small (cooked)
- 5-6 small potatoes /peeled-diced or chopped small then par boil, not cooked , just slightly tender and drained
- 1/4 cup minced carrots
- 1 small onion,diced or chopped
- 2 large eggs beaten
- 1/2 tsp pepper
- 1/2 tsp salt
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/2 tsp fresh ground red and black peppercorns
- 1/8 tsp dry mustard
Method
I use to chop all with a knife but, I bought this handheld chopper/dicer from a pampered chef party I had, it is the greatest thing. I use it all the time is so easy.
- take your corned beef,onions, carrots,potatoes,and mix all together.
- then add all your seasoning.
- mix well
- now add the eggs and mix well
- put a little oil or margarine or pam in a fry pan or skillet, on med to medium to high heat. different stoves and pans cook different
- take about 1 handful about 1/2 cup squeeze in hands to form a ball.
- and then flatten like a burger about 1/2 in thick.
- carefully place in heated pan ,when the bottom is brown and crispy
- flip over and cook until the other side is brown and crispy.
