How to Cook Filipino Style Chicken Adobo

How to Cook Filipino Style Chicken Adobo
What is Adobo?
In the Philippines, Adobo is a dish wherein the meat is stewed in soy sauce and vinegar. There are many ways of cooking adobo, but the distinct Filipino adobo has a delicious tangy taste to it. Here is how to cook authentic Filipino adobo.
Ingredients to make the Adobo:
Chicken – cut into serving pieces
Cooking oil
Ginger – chopped
Garlic – chopped
Vinegar
Dark soy sauce
Light soy sauce
Sugar
Black peppercorns
Bay leaf or laurel leaf
Procedure to make the Adobo:
1. First boil some water and put the chicken pieces in. Once boiled, drain the chicken. This step is to remove the excess fat from the chicken.
2. Heat the oil in pan.
3. Saute the ginger and garlic.
4. Add the chicken pieces in.
5. Add vinegar, dark soy sauce and light soy sauce. The ratio is about ¼ dark: ¾ light. The dark soy sauce is used to add darkness to the color of the sauce. Do not use all dark soy sauce or the sauce will be too dark brown. Likewise do not use all light or the sauce will look too pale.
6. Add sugar and peppercorns and a couple bay leaf.
7. Mix everything well, then cover the pot and let it simmer.
8. Notice that we didn’t add any water at this point. The vinegar acts as the liquid which will penetrate through the chicken to bring the tangy taste.
9. Let the adobo simmer for about 20 minutes.
10. Now you can add a little bit hot water if you want your adobo to have more sauce.
11. Let simmer for a few minutes more.
12. Serve hot and enjoy with hot steamed rice!
Tip:
· If the chicken has skin, then the adobo will naturally turn out to have a thicker consistency. If you’re using skinless chicken and want to have the thick consistency of sauce, you can add a little bit of cornstarch/water mixture into the adobo just before you turn off the heat.
· The adobo looks better if you mix different chicken parts such as legs and thighs, instead of all chicken legs or all chicken thighs.
· Chop the chicken into smaller pieces so that your adobo will cook faster.
