How to Cook Perfect Roast Chicken. Roast Chicken Cooking Times
An easy to follow guide plus cooking times for perfect roast chicken.
Pre-heat your oven to 190C (375F / gas mark 5). Put the chicken in a roasting tin and rub 50g (2oz) of butter over the bird. Season well with salt and ground black pepper.
If you enjoy bacon then place around half a dozen smoked rashers over the chicken.
Once the oven has reached the desired temperature place the roasting tin/chicken on the middle shelf.
Roast chicken cooking times:
Cook for 20 minutes per 450g (1lb) plus 15 minutes extra. So for example, a chicken weighing 1800g (4lb) would take approximately 95 minutes in the oven. Make sure you baste the chicken at least three times during cooking. For the final 15 minutes of cooking, remove the bacon (if you have added any) and wrap in foil to keep warm. Increase the oven temperature to 220C (425F / gas mark 7) for these last 15 minutes. This will help give the skin an extra crispiness.
Remove the bird from the oven, wrap in foil and let it rest for around 30 minutes before carving.

I usually do a roasted chicken once a week. My little trick is to preheat the oven to 450 and roast for 15 minutes, then reduce to 350 and follow the 20 minute per pound rule. I also like to put fennel in the roasting pan. It just adds so much flavor. Well, now you have me hungry.
