How to Prepare Veal & Lamb Meatballs

An overview on how to prepare fabulous veal and lamb meatballs.

Meatballs are commonly served with various kinds of pasta.  There are several ways to make homemade meatballs.  I have a fabulous recipe for homemade meatballs however; I tried using ground veal and lamb.  The veal and ground lamb meatballs were the best that I have ever made.

All you need is one pound of ground veal, one pound ground lamb, 1 cup shredded onion, ½ cup chopped garlic, 1 cup fresh chopped parsley, ½ cup whole milk, 1 cup Italian bread crumbs, 3 large eggs, 1 tablespoon sea salt, 1 teaspoon black pepper, 1 cup grated Romano or Locatelli cheese.

In large skilled or fry pan add 1 cup of olive oil, leave stove off until you are ready to fry meatballs.  In the meantime, take veal and lamb and place in large mixing bowl; add onion, parsley, garlic, salt, pepper, eggs, milk, and breadcrumbs.

Mix all ingredients together with ground meat until well mixed.  Start rolling meat into medium size meatballs and place on large dish.  Once oil begins to bubble you can start placing meatballs in skillet.  After about 5 minutes turn meatballs to other side and finish cooking.

Place meatballs on paper towel and drain excess grease.  Lamb is tasty but can be greasy, make sure you drain meatballs well.  You can serve lamb & veal meatballs with pasta, lasagna or in a sandwich.

Cooking is truly an art an art in which anyone can learn as long as you are willing to learn and put in the time.  Once you learn how to cook it becomes easier and you have the ability to become more creative.
