International Recipes: Israeli Sweet and Sour Meat Balls
Here is part of a series of international recipes for those who like to be daring.
1/2 pound lean beef, ground
1/2 pound veal, grounded
1 large egg, lightly beaten
1 clove garlic, finely minced
1 onion finely chopped
6 Tablespoons cooking fat
1/4 cup finely minced parsley
salt and freshly ground black pepper
1 hard roll
cold water
3 Tablespoons granulated sugar
3 Tablespoons vinegar or lemon juice
2 cups boiling beef stock
Combine the beef and veal in a mixing bowl. Add the egg and set aside
Cook the garlic and onion in one Tablespoons of the fat until the onion is wilted. Add this to the meat. Add the parsley and salt and pepper to taste.
Soak the roll thoroughly in cold water, then squeeze with the hands to extract most of the mositure. Break up the bread with fingers to add to meat.. Using the hands , shape the meat into 24 meatballs.
Heat the remaining fat in a skilletand cook the meatballs until browned on all sides. Add the sugar, vinegar and beef stock and pour everything in a saucepan. Simmer 15 minutes and serve hot.
