Jamaican Curry Goat

There are so many people who enjoy coming to Jamaica to enjoy the food. Curry goat is one of the island well sought after local dishes.

Ingredients

  1. 1 goat (about 3 lbs)
  2. 1.5 tablespoon Vegetable oil
  3. 2 cloves garlic- chopped
  4. 2 Scallions – chopped
  5. 3 sprigs fresh thyme –chopped
  6. 1 tsp soy sauce
  7. 1small chopped onion
  8. 3-4 tablespoon Jamaican curry powder
  9. 1 tablespoon allspice
  10. 2 teaspoons salt
  11. 1 tsp ginger
  12. 2 cups water
  13. 2 teaspoon chopped pepper

         14        1-cup diced potato

Method

  • Wash the goat in a little water adding 1 tsp vinegar or lime.
  •  Remove excess fat from goat and cut it in to small pieces.
  • Rub in all the ingredients into the goat and allow to marinate for 5-10 minutes.
  • Heat the vegetable oil very hot and add the goat and 1 cup water.
  • Stir then cover sauce pan and cook for 30 -40 minutes until goat is tender ( to speed up procees use a pressure cooker)
  • Add potatoes and 1 cup water and cook until potatoes are tender enough to thicken sauce
  • Turn off flame and serve with boiled bananas, plain rice or boiled dumplings.
