Jessica Rose’s Swarthy Pork Chops and Sauerkraut with Red Potatoes

Swarthy and rich dish with pork chops and sauerkraut. You’ll love this new idea!

I’ve always loved tart and tangy recipes. This was something that my mother used to make for us kids when I was growing up. A very rich and mouthwatering meal that will leave you satisfied on a cold winter’s night. I believe this is a German dish.

Ingredients:

  • Four large pork chops with some fat left on.
  • 1 small yellow onion, chopped into large pieces (finer chopped onion will burn).
  • 2 tbsp olive oil
  • 2 cloves of garlic, minced.
  • 2 cups sauerkraut, drained, but not dry (save a little juice in case your dish gets a bit dry).
  • 1 can cream of mushroom soup.
  • 8-10 red potatoes.
  • 1/2 cup frozen corn.
  • 1 tbsp caraway seeds (add to sauerkraut after draining to soften up seeds).
  • Dash of smoke salt.
  • Dash of freshly ground black pepper.
  • Splash of soy sauce.

Method

  1. Take pork chops and wash thoroughly under running water, dry with paper towel.
  2. Take large frying pan and add olive oil, garlic and onions over medium heat.
  3. Soften onions and garlic, then add pork chops. Turn heat up a little higher. We want the onions to caramelize and the pork chops to brown. Flip pork chops a few times to make sure they are browned evenly. Make sure that you don’t burn the bottom of the pan (I’m getting hungry here… lol).
  4. Add drained sauerkraut and caraway seeds to pork chops. Scrape bottom of pan while mixing to get caramelized onions and pork drippings into sauerkraut. Cover on low heat for 10 minutes.
  5. Add can of cream of mushroom soup with 1/4 can of water. Add all other seasonings to mixture. Mix well. Leave on low to medium heat, stirring occasionally.
  6. Take red potatoes and boil them in a large pot until tender.
  7. When potatoes are done, add frozen corn to chop mix (This way corn will retain sweetness and will not over cook).
  8. Drain potatoes.

Chops should be done when potatoes are done cooling off.

To Serve:

Take 2 potatoes and mash on plate, add one chop and sauerkraut mix. Salt and pepper to taste.

Serving Suggestion:

I like to add a little bit of butter to potatoes before adding sauerkraut. I also like to add a touch of sour cream on top.
