Lamb Chops with Rosemary Plum Sauce
A perfect entree for family, friends or for when you just feel like cooking something outstanding outside on your grill!
Lamb Chops with Rosemary Plum Sauce (Serves 4)
4 Lamb Chops, well-trimmed; 3/4-inch thick
1/2 Cup Plum Preserves
2 Tbsp. White Wine Vinegar
2 Tbsp. Worcestershire sauce
1 Tbsp. Fresh Rosemary, snipped
2 Garlic Cloves, crushed
1 Tsp. Black Pepper
1/2 Tsp. Sea Salt
In medium mixing bowl combine together all marinade ingredients; cover and refrigerate 1/2 cup marinade for bushing on lamb chops during grilling.
Place chops in a plastic bag and add remaining marinade, turning to coat evenly. Close bag securely and marinate in refrigerator for 6-8 hours or overnight, turning occasionally.
Remove chops from marinade; and place chops on grill over medium coals or medium on gas grill. Grill 12-14 minutes for rare to medium doneness, turning once. Brush both sides of chops with reserved marinade during last 5 minutes of grilling. Remove and serve with rice pilaf or lime rice, fresh asparagus and a glass of wine.
