Latin American Grilled Sausages

Grilled Latin American sausages are great for the outdoor grill. This is a very colorful, tasty dish. The sauce is really more like a vegetable stew and can be a complete meal. The sauce could be prepared ahead and stored until ready to be reheated.

Grilled Latin American Sausages

9 spicey chorizos (Spanish sausage)

9 mild chorizos

2 red peppers

2 green peppers

Cut peppers into squares (about 2 inches) alternate on skewer a piece of green pepper, mild sausage, red pepper and spicy sausage.  Grill well on both sides.  Serve with sauce.

Sauce

2 green peppers

2 red peppers

2 red onions, cut into julienne strips

4 tablespoons cooking oil

6 fresh, peeled and seeded tomatoes, cut into 1/4 -inch squares

4 shallots, minced

1/4 teaspoon crushed red pepper

1/4 salt

1/8 teaspoon monosodium glutamate

Split and seed peppers, cut into julienne strips; saute with onions in oil until crisp, not wilted.  Add remaining ingredients, simmer 10 minutes.  Serve over sausages.
