Make-Ahead Roast

Good to have on hand for the family when the cook’s away.
Ingredients
- Top sirloin beef roast 4lbs. 1.8kg
- Water 1/2cup 125mL
Place roast in medium roasting pan. Add water, Cover, Roast in 300 degrees Fahrenhite (150 Degrees Celcius) oven for about 1 1/2 hours until medium rare to medium or to desired doneness. Pour drippings and any brown bits into small container. Makes about 2 cups (500mL) drippings Chill drippings and roast separately. Remove and discard any hardened fat on drippings. Thinly slice cooled roast across grain.
