Mama’s Almost Meatless Meatloaf

I tend to be a frugal cook and have taken to cooking meatloaf in a sort of ‘whatever is on sale, with whatever I have on hand that might taste good.’ I also have a garden, nut trees and the like, and things tend to get thrown in, but that is what meat loaf is for. This is a relatively healthy recipe, and filling, and my husband likes it, which is saying something. He is the pickiest man on this planet. No kidding.

Ingredients

  • 1 pound (or so) either ground beef or ground pork
  • 2 cups bread crumbs/cracker crumbs (I use whole wheat or multi-grain bread and crackers)
  • ¼ cup instant rice (I use a brown instant)
  • 2 eggs, beaten well
  • 1 small well diced onion (or a bunch of green onion tops if you have a garden)
  • ¼ cup diced nut (I use hickory nuts, or black walnuts)
  • ¼ cup milk
  • 1 tablespoon Worcestershire sauce
  • about ½ clove of garlic, very finely diced
  • a bit of sage (fresh and shopped if available, if not whatever you have is fine)
  • a bit of basil (fresh and finely chopped, and if not, whatever you have is fine)
  • ¼ tsp. Ground mustard
  • 1 tsp. Salt (or more. I use saltine crackers and don’t find that it needs a lot of additional salt.
  • 2 tsp. Black Pepper

Method

  1. Preheat oven to 375 degrees Fahrenheit. Grease a large bread pan (I just spray it with a cooking spray).
  2. Beat eggs in a large mixing bowl, add all other ingredients and promptly mix thoroughly. Pat mixture into pan and cook a little bit over an hour, or until mixture is browned on top and done in the center. I drain off some of the resulting grease, but a lot of the liquid will be soaked up by the rice and the bread. The top will have bubble up and the texture of custard in spots, but is very tasty.

In my family it will feed six people, but we are a scrawny lot. Double everything for more or bigger eaters. Or have a salad prepared.

    Sounds delicous Annie , hubby loves meatloaf so I will have to try this one, by the way you can’t have the pickiest eater for a man I have him lol. Drives me crazy at times lol

    Love the chopped nuts added. I used to throw in soy protein bits. Meatloaf is a great way to stretch ground meat.

    I would have loved it when I made meat loaves but now I am a vegetarian.

    I have never made any meatloaf before, think should try your recipe because hubby prefers heaving meat over vege most of the time.
