Meat with Fresh Green Almonds or Green Olives

A Cretan recipe. People learned to use each product they could find at any season. It is a delicious spring food.

Ingredients

  1. 1kg of meat (hare, rabbit, pot roast, goat)
  2. 1/2 glass olive oil
  3. 1 chopped onion
  4. 1/2 kg chopped tomatoes
  5. 600gr fresh almonds (green squishy from the trees before they become hard)
  6. 1/2 glass of white wine
  7. salt
  8. pepper
  9. juice of 1 lemon

Method

  1. Wash the meat and chop it in small pieces.
  2. Salt the meat and saute in the olive oil for 10 min.
  3. Add the onion and the tomatoes.
  4. After some minutes of boiling add the fresh almonds (snick them a little from both sides)
  5. If liquids in the saucepan are not enough during the preparation, add few wine and not water.
  6. Few minutes before it is cooked add the lemon juice.

Replace the fresh almonds with green olives if you can not find them.

Tip: Salt each ingredient separately for best taste.
