Menudo: A Filipino Dish

Here’s a simple dish but great in taste. A must-try for working moms and those who have no experience in cooking yet.

Too much ingredients can only spoil the taste of any recipe. To avoid such “chaotic” taste of mixing and experimenting, try this homemade menudo I have learned straight from my mom. It’s simple, easy to prepare and yet will surely pass your distinctive taste. Whenever I cook this recipe, my husband as well as my two-year-old son always eats well. With this recipe I recommend to my fellow moms out there to try. This won’t fail the appetite of your family.

Ingredients:

  • Cooking oil
  • chopped garlic
  • 1 chopped onion
  • 3 sliced tomatoes
  • 1 sliced bell pepper
  • ½ kilo pork kasim (menudo-cut)
  • ¼ kilo chicken liver (sliced like pork)
  • 4 peeled and cubed potatoes
  • 2 peeled and cubed carrots
  • Soy sauce
  • 1 can liver spread
  • ¼ kilo hotdogs (sliced) (optional)

Methods:

  1. In a pan, sauté garlic, onions, tomatoes and bell pepper until it’s slightly cooked.
  2. Put the pork and chicken liver simultaneously then cover the pan to absorb the flavor. Let it simmer for about 2 minutes.
  3. Afterward, put the potatoes and carrots inside the pan.
  4. Now add the liver spread, and then season with soy sauce according to your taste. The flavor will come out eventually so don’t add water.
  5. Cover the pan until the pork is tender. Top with hotdogs if desired. Serve hot.
  6. This recipe serves 6-7 persons.
