Microwave Meatloaf
I discovered this recipe in a diet book a few years ago and tweaked it to my satisfaction. Once I got the recipe the way I liked it, it was great. I have had many compliments on this and it takes little time to complete.
1 lb. Ground Beef
5 Saltine crackers
¼ C. Milk
1 Egg
½ C. Fine chopped onions
Salt and Pepper
In a small skillet coated with non-stick cooking spray, sauté your onion and set aside.
In a large mixing bowl, add your egg and beat it well. Mix in milk and onions. Next, add ground beef and crackers and mix thoroughly.
Place meatloaf in a microwave safe loaf pan coated with non-stick cooking spray. Place in Microwave using medium-high power.
Set microwave for 15 minutes. When finished turn it and microwave another 10-12 minutes.
When I make these they are so tender that they will almost fall apart when you cut them. I usually wait until I am finished cooking and add ketchup to the top. That is up to you. This recipe can also be baked in a conventional oven if you desire, bake for 1 hour at 350 degrees. Enjoy.

Microwave meatloaf! Haha sounds like something I would make because I cant cook! Maybe if I dont like it I could feed it to the neighbors dogs!
