Minced Beef with Eggs

- 6 eggs
- 1 onion (finely chopped)
- 1-1/2oz butter
- 1lb minced beef
- 1 green pepper (sliced)
- 2 tomatoes (peeled, seeded and diced)
- 2 tablespoons flat leaf parsley (freshly chopped)
- salt and freshly ground black pepper
Start by sweating the onion in the butter for about ten minutes, until it’s starting to caramelize. Then add the minced beef, and continue to cook, stirring, until the meat browns. Stir in the green pepper and diced tomato. Cook for two minutes and mix in the parsley, and season with salt and pepper.
Cover the pan, and simmer for about eight minutes. Finish by making six holes in the meat in the pan, and break an egg into each space. Cover and cook for about five minutes until the egg whites are cooked through and serve.
