Nacho Hay-Stacks

Here is my favourite Mexican creation which I make every chance I get. Follow these steps to create your Nacho Hay-Stacks that will feed about 4 people.

Ingredients

  • 1lbs (500g) hamburger, mince, diced chicken or other meat
  • Can of refried beans
  • 2x sachets of taco seasoning
  • Salsa
  • Large packet of corn chips ro taco shells
  • Pack of grated cheese
  • Lettuce, carrot, tomato
  • Sour cream or yoghurt

Method

  1. Brown the meat and add a can of refried beans and a sachet of taco seasoning and mix together.  For extra flavour (which I love) add some garlice, chilli powder and any other spice your fancy.
  2. Spread a large baking tray with corn chips or broken taco shells.  Put the meat mixture on top of the corn chips according to your desire.  I like to have a lot of meat.
  3. Depending on what you can handle, put some mild, medium or hot salsa over the meat.
  4. Add a layer of grated cheese over the corn chips and meat.  Sometimes it’s nice to put cheese on the corn chips before and after the meat.
  5. Put the tray in a warm oven until the cheese melts.  Oven temperatures will vary so check on the tray every few minutes.
  6. While the tray is cooking, chop up or grate lettuce, carrot, tomato.  Also mix together a sachet of taco seasoning and sour cream.  Alternatively you can use any type of yoghurt instead of taco-sour cream.
  7. Once the cheese is melted, spread the vegetables, taco-sour cream sauce and more cheese over the tray.
  8. Serve immediately with a nice drink. 

Alternative Serving

A different way to do this dish is instead of cooking the corn chips and meat in the oven, throw all the ingredients into a bowl and mix it around.
