Navajo Tacos (Indian Tacos)

Navajo Tacos are an economical main course, popular in the Southwest. This is an easy recipe the whole family will love. Navajo Tacos are also great for buffets.

Ingredients per Taco

Amounts are approximate.

  • 1 piece freshly prepared Navajo frybread
  • 1/4 c seasoned ground pork, beef or lamb (use taco seasonings)
  • 1/4 c cooked pinto beans (canned are fine, drain and rinse first)
  • shredded lettuce to cover
  • sliced or diced tomatoes to cover
  • shredded jack or colby cheese to cover
  • optional: guacamole, red or green chile sauce

To make a vegetarian version, leave off the meat. Use potatoes, other chopped or shredded vegetables or New Mexican Spanish Rice instead.

Method

Layer the ingredients on a large plate, in the order given, frybread as the base. Provide a knife and fork and napkins; Navajo Tacos aren’t finger food!

Navajo Tacos (or Indian Tacos) are popular state fair food. Try Churros, Biscochitos and New Mexican Hot Chocolate to finish the meal.

For buffets or potlucks, just provide the ingredients in separate containers. Keep everything at the correct temperature.
