Pancit Bihon

Filipino rice noodle pork dish.

Ingredients

  • 1/4 c. cooking oil (canola or olive is healthiest)
  • Thinly sliced pork equivalent to a chop per person
  • 2 cloves garlic, minced
  • 1 large onion sliced lengthwise
  • Thinly sliced or shredded carrots equal to half a large carrot per person
  • Small head of cabbage, shredded
  • 2 T. soy sauce
  • Salted water
  • 1 pkg. Pancit Bihon (rice sticks)
  • Salt and pepper to taste.

Method

 
Heat oil; saute pork, garlic and onions until pork is no longer pink and onion is
transparent. Add carrots and cabbage. Stir frequently. 
 
In the meantime, boil salted water, add Pancit Bihon and cook according to package
directions. Drain. Cut up noodles into smaller pieces. Add noodles and soy sauce
when cabbage is tender.

Season with salt and pepper to taste.

    Sounds good, but I’m not into pork, so not actually goin’ to try it.

    Michelle, if you can’t/don’t eat pork but do eat meat, why not try it with chicken or beef and let us know how well it works? Considering the oriental flavor of the dish, the chicken would probably work really well.
