Pork and Cabbage Salad

Try this easy recipe. Asian seasonings make Pork and Cabbage Salad a delicious dish.

Note: Marinate the pork for Pork and Cabbage Salad ahead of time for the most flavour.

Ingredients

*1/2 lb boneless pork, sliced thin and marinated in a little soy sauce
*1/2 head any type cabbage, shredded
*2 large carrots, grated
*1 tbs soy sauce
*3 tbs sugar
*3 tbs rice or cider vinegar
*1 tsp fish sauce (nuoc mam); optional
*2 tsp fresh lime juice
*1 tsp Thai or Vietnamese chile garlic sauce (or to taste)
*3/4 c roasted peanuts, chopped
*sprigs of fresh mint, Thai basil or coriander/cilantro

Preparation

Marinate the sliced pork in soy sauce for at least 30 minutes. Stir fry over high heat until tender; allow to cool. Mix the pork with the shredded cabbage and grated carrots. Cover and chill.

Blend the soy sauce, sugar, vinegar, fish sauce (if used), lime juice and chile paste to make the dressing.  Pour over the Pork and Cabbage Salad just before serving. Mix well and let sit for a few minutes. Garnish with chopped peanuts and sprigs of fresh mint, Thai basil or coriander/cilantro. Serve Pork and Cabbage Salad at room temperature.
