Pork and Pak Choy Fried Rice

Nutritious fast food stir-fry that you can make yourself.

Pork and Pak Choy Fried Rice makes for a fast wholesome nutritious meal ready to eat in under 20 minutes from start to table.

Ingredients

  • 500 Grams (1¼ Pounds) of Pork Mince
  • 1 Bunch of Pak Choy
  • ½ Bunch of Coriander Leaves (to serve)
  • 4 Green Shallots
  • 2 Cloves of Garlic
  • 3 Cups of Cooked Jasmine Rice
  • ¼ Cup of Hoisin Sauce
  • 2 Tablespoons of Light Soy Sauce
  • 2 Tablespoons of Vegetable Oil
  • 1 Tablespoon of Grated Ginger
  • 1 Teaspoon of White Sugar
  • 1 Teaspoon of Sesame Oil
  • 1 Splash of Oyster Sauce
  • Freshly Ground Sea Salt (to season)
  • Freshly Ground Black Pepper (to season)

Method

  1. Peel, trim and crush garlic (a garlic press is ideal for this)
  2. Trim, rinse and thinly slice the shallots
  3. Wash, drain, trim and shred Pak Choy
  4. Wash, drain and rip coriander leaves ready for use as garnishing
  5. Into a small mixing bowl add the hoisin sauce, soy sauce, sesame oil, a splash of oyster sauce and white sugar and combine thoroughly
  6. Using a large wok or large frying pan over a high heat add vegetable oil and bring up to temperature (smoke point). Swirl wok to partially coat lower sides with hot oil and then immediately add the pork mince, crushed garlic and grated ginger. Stir-fry until pork has browned (about 2½ minutes)
  7. Now stir in half of the chopped shallots and continue stir-frying for another minute or so.
  8. Then stir in the sauce mixture, add Pak Choy and continue stir-frying for another 90 seconds
  9. Add the rice and toss mixture in wok then continue stir-frying until the rice has heated through (2 to 3 minutes) and you are ready to go.

Serving

Spoon desired portions into bowls, top with remaining shallots and torn coriander leaves. Season with freshly ground sea salt and freshly ground black pepper to taste and enjoy.

Yield: These portions will yield 4 adult sized servings
