Quick and Easy Recipe for Pine Nut and Bacon Spaghetti

This recipe is a great meal to make in minutes. It is easy, effortless and quick to make – perfect for this busy world we find ourselves in!

Pine nut and bacon spaghetti is a dish that benefits from being exceptionally easy to make and take very little time. The effort level required to make Pine nut and bacon spaghetti is very low which is a real benefit for those that do not feel so confident in the kitchen.

The best thing about Pine nut and bacon spaghetti is that it is very cheap to make. Most people will have the majority of the required ingredients in their kitchen anyway. Even if you do not have them, the ingredients are so cheap to buy that it makes it a gloriously cheap meal for the whole family.

 

What Ingredients will I need?

175g (6 oz) spaghetti 

50g (2 oz) Cheddar cheese, grated 

300g (11 oz) bacon rashers, sliced into 5cm (2 in) strips 

100g (4 oz) pine nuts 

1 lemon, halved 

1 (20g) pack fresh tarragon – stems removed and finely chopped 

Olive oil 

Sea salt and freshly ground black pepper to taste 

 

What is the Preparation method

·         The first thing to do is to preheat the oven to 220 C / Gas mark 7.

·         Then you need to drizzle some olive oil in your roasting tin.  The sliced bacon should be placed in the tin and left in the oven for 20 minutes.

·         Whilst the bacon is in the oven, cook the spaghetti as per the packet instructions. 

·         With ten minutes to go, add the pine nuts to the bacon and replace in the oven until the bacon is all done

·         The bacon, oil and pine nuts should make an excellent dressing for your pasta, so drain the pasta and add it to the roasting tin. Toss the spaghetti in the oil and juices until well covered.

·         Divide up and serve, covering generously with  the lemon juice, the cheese and the tarragon.
