Roast Pork Press Seasoning

The trick with any roast lies in its seasoning and cooking procedures. Learn how to get this fundamental principle under control.
Ingredients
- 110 Grams of Finely Diced Blanched Almonds
- 1 Bunch of Parsley
- 2 Teaspoons of Dijon Mustard
- 1 Teaspoon of Minced Garlic
- 1 Teaspoon of Olive Oil
- 1 Pinch of Cinnamon
- Freshly Ground Sea Salt (primary seasoning)
- Freshly Ground Black Pepper (primary seasoning)
Method
- Wash trim and finely dice the parsley leaves
- If your blanched almonds are not finely diced then finely dice them now
- If you need to peel, trim, rinse and mince the garlic then do so now
- To a small mixing bowl add the olive oil, minced garlic, Dijon mustard and cinnamon.
- Give these ingredients a quick stir
- Now add the remaining seasoning ingredients (the finely diced blanched almonds and the finely diced parsley leaves) and stir well to ensure that all ingredients are well and truly thoroughly combined (ingredients should be evenly distributed throughout this press seasoning).
Press Seasoning a Pork Roast
- Start seasoning the pork roast by rubbing some freshly ground sea salt and some freshly ground black pepper into a pork roast with rind removed. At this point let the salt and pepper seasoned pork roast sit for around 5 to 10 minutes.
- Now plaster the pork roast with seasoning mixture. Add teaspoonful/tablespoonful sized dollops of seasoning mixture to the pork roast and then use the backside of a teaspoon or tablespoon to spread seasoning mixture over meat. Continue adding and spreading the seasoning until the entire surface of the meat is more or less evenly coated with it.
- With an even coating of seasoning covering the pork roast we can turn our attention to pressing the seasoning into the pork meat. Best results are achieved when using the backside of a teaspoon or tablespoon.
- Add, spread and press more seasoning into meat as required
- Let seasoned pork roast sit for 30 minutes before transferring the press seasoned pork roast to oven for cooking
