Sauerkraut and Italian Sausage: A Fried Dish

Frying Sauerkraut with Italian Sausage.

One of my favorite dishes is fried sauerkraut with Italian sausages. It is a delicious dish and easy to make. To 1/3 cup of diced onions add ¼ cup of butter or better yet ¼ cup of bacon drippings. Lightly fire this in a large frying pan of a size to hold the sauerkraut and sausages too. After the onions and bacon drippings are lightly fried add the contents of a #3 can of canned sauerkraut to the pan. Before you add the kraut to the mixture thoroughly rinse it in a strainer with cold water, and allow it to drain. When it is barely dripping add it to the pan. Add the 2 teaspoons of brown sugar and caraway seed.

At the same time you are frying the kruat place a package of either sweet or hot Italian sausages in a separate pan and brown the sausages. Once they are browned add them to the kraut mixture and continue frying until you judge they are ready to eat. Add 1 cup or more of cold water to the mixture to keep it frying.

Ingredients

  • 1/3 Cup diced onions
  • ¼ cup butter or bacon drippings
  • 1 #3 can 2 ¾ cups of rinsed sauerkraut
  • 2 teaspoons of brown sugar (optional)
  • 1cup of water or more as it steams away
  • 1 teaspoon of caraway seed (optional)

Method

Cook slowly for 20 minutes. Add some of the saved sauerkraut juice to flavor. You can also add some cider vinegar to taste. Makes 4 – 5 servings.

    Simple amd delicious! I made a vegan version, using Field Roast Italian sausage. I didn’t have any caraway seed, but I had celery seed, and that actuallly worked pretty well.
