Sausage and Ravioli
Tomato based Ravioli dish, ready in 20 minutes. Easy!
This is a quick one I like to make when I don’t want to have a lot of washing up.
Serves 2
- 4 Sausages (Lincolnshire or Cumberland is best)
- Can of chopped tomatoes
- Parsley
- 1 small onion
- 2 cloves of garlic
- 2 medium mushrooms
- 1/4 yellow bell pepper
- 2 table spoons of Parmesan (or more if your like the taste like I do)
- salt and pepper
- 1 Pre-packed mushroom ravioli
Preparation time is about 20 minutes.
- Fry the four sausages in your pan until cooked.
- While sausages are frying, chop your onion,garlic, mushrooms, and yellow pepper into rough chunks. Make sure the onion is in thin round sections.
- When the sausages are ready, don’t drain the pan, instead adding the shopped veg to the pan and sausages. Fry for a minute and then add tomato.
- Boil some water in a kettle and add ravioli to pasta pot with boiled water. Cook for about 3-5 minutes or until soft and ready.
- Strain the water from the ravioli and add to sausage dish. Sprinkle Parmesan and mix well.
- Chop a handful of parsley and sprinkle over the dish.
- Dish up and enjoy!
