Sausage and Ravioli

Tomato based Ravioli dish, ready in 20 minutes. Easy!

This is a quick one I like to make when I don’t want to have a lot of washing up.

Serves 2

  • 4 Sausages (Lincolnshire or Cumberland is best)
  • Can of chopped tomatoes
  • Parsley
  • 1 small onion
  • 2 cloves of garlic
  • 2 medium mushrooms
  • 1/4 yellow bell pepper
  • 2 table spoons of Parmesan (or more if your like the taste like I do)
  • salt and pepper
  • 1 Pre-packed mushroom ravioli

Preparation time is about 20 minutes.

  1. Fry the four sausages in your pan until cooked.
  2. While sausages are frying, chop your onion,garlic, mushrooms, and yellow pepper into rough chunks. Make sure the onion is in thin round sections.
  3. When the sausages are ready, don’t drain the pan, instead adding the shopped veg to the pan and sausages. Fry for a minute and then add tomato. 
  4. Boil some water in a kettle and add ravioli to pasta pot with boiled water. Cook for about 3-5 minutes or until soft and ready.
  5. Strain the water from the ravioli and add to sausage dish. Sprinkle Parmesan and mix well.
  6. Chop a handful of parsley and sprinkle over the dish. 
  7. Dish up and enjoy!
