PREPARATION TIME: 10 MINUTES. PLUS 10 MINUTES RESTING COOKING TIME: 1 HOUR 30 MINUTES SERVES 4

EASY

1  free-range chicken, around 1 to 1.25kg (2lb 4oz to 2lb 12oz)

2 to 3tbsp fresh thyme leaves

600g (11b 5oz) Desiree potatoes, unpeeled and cut into chunks 300 to 400g (10 to 14oz) mixed vegetables for roasting, such as courgettes, peppers, onions and aubergines, cut into chunks 2tbsp olive oil 1 garlic bulb

I Preheat the oven to 200 C, 180 С fan, 400 F, gas 6. Season the chicken and place in a large roasting tin. Scatter over the thyme. Toss the potatoes and vegetables in the oil and season well.

2 Scatter the vegetables around the chicken. Roast for 1 hour, then halve the garlic bulb and add to the dish. Roast for a further 20 minutes. Check the chicken is cooked by piercing the thickest part of the thigh and see if the juices run clear.

Remove the chicken from the oven, take out of the tray, cover with foil and rest for 10 minutes. Toss the veg around the dish and roast for a further 10 minutes. Carve the chicken and serve with the veg. Per serving: 380 calories, Юд fat (2g saturated), 28g carbohydrate
