Soft Chicken Tacos

This is a homemade taco recipe. Watch out Taco Bell!

Ingredients:

  • 1 lb. Fat-free chicken tenders, cut in half
  • 1 tbsp. Taco seasoning mix
  • 4 fat-free flour tortillas
  • ¼ cup fat-free shredded Cheddar cheese
  • ½ cup fat-free chunky-style salsa

Method:

  1. Prepare a hot grill and lightly spray with nonfat cooking spray.
  2. Place chicken pieces in a medium bowl and toss with taco seasoning until coated.
  3. Thread chicken onto metal skewers and grill 10 to 15 minutes, until chicken is tender and cooked through.
  4. Lightly spray large (18 inches) foil with nonfat cooking spray.
  5. Fill each tortilla with ¼ chicken pieces, 1 tablespoons cheese, 2 tablespoons salsa; roll up burrito-style and place on foil sheet.
  6. Cook on grill 2 to 3 minutes, just until cheese is melted and tacos are heated through.
