Southwestern Cooking: Navajo Tacos (Indian Tacos)

Navajo tacos are easy and economical main courses, popular in the Southwest.

Ingredients per Taco

Amounts are approximate.

  • 1 piece freshly prepared Navajo frybread
  • 1/4 c seasoned ground pork, beef or lamb (use taco seasonings)
  • 1/4 c cooked pinto beans (canned are fine, drain and rinse first)
  • shredded lettuce to cover
  • sliced or diced tomatoes to cover
  • shredded jack or colby cheese to cover
  • optional: guacamole, red or green chile sauce

To make a vegetarian version, leave off the meat.

Method

Layer the ingredients on a large plate, in the order given, frybread as the base. Provide a knife and fork and napkins; this isn’t finger food!
