Spicy Meatballs

I got his recipe in 1985 and have made improvements on it over the years. It is one of my hubby’s favorite dishes.

Ingredients

  • 1-2 teaspoons of chopped up jalapenos
  • 1 lb. of ground beef
  • 1 egg
  • 1/2  cup of Italian bread crumbs
  • 1/4 cup of milk
  • 1/2 cup of grated monterry jack cheese or cheddar
  • 1 small onion, chopped or use dried minced onion
  • 1 teaspoon of salt
  • 1/4 teaspoon of pepper

Mix all ingredients together in a large bowl using your hands–Roll into small balls–place on a foli lined cookie sheet–bake in a 400 degree oven for 15-20 minutes.

Sauce Ingredients

  • 2 -14.5 oz. cans of whole or diced tomatoes
  • 2 garlic cloves, chopped
  • 2 Tbsp. of dried parsley
  • 1 Tbsp. vinegar
  • 1/8 tsp. cumin
  • 1/8 tsp. salt

Method

One at a time , puree each can of tomatoes in a blender—place in a saucepan when done along with the other ingredients–simmer at least 30 minutes–pour over the meatballs when done–serve the meatballs & sauce as an appetizer using toothpicks to spear the meatballs–You may also pour the meatballs & sauce over any type of pasta or over rice–I’ve done all 3 and  I’ve also doubled the recipe a lot of times.
