Stirling Shepherds Pie

A recipe I cook for my family. Tasty and worthy to be passed on.

I have this lovely recipe that i have used for years and it makes the tastiest shepherds pie on this planet.

So if you like a good hearty meal and love shepherds pie try this one you’ll love it.

here goes

Ingredients:

  • 1 tbsp of olive oil
  • 2 onions finely chopped
  • 2 Garlic cloves finely chopped
  • 1 and a half lbs of good quality minced beef or lamb
  • 2 Carrots finely chopped
  • Salt and pepper
  • 1 tbsp of plain flour
  • 8 fl oz of beef stock
  • 4 fl oz of red wine
  • Worcestershire sauce

For the Mashed Potato

  • 1 and a half lbs of maris piper or king edward potatoes
  • 55g of butter
  • 2 tbsp of Double cream
  • Salt and pepper

Method

  1. Preheat the oven to 180 degrees c or gas mark 4 then
  2. Heat the olive oil in a large caserole dish and fry onions until softened
  3. then add Garlic.
  4. Raise the heat and then add the meat.
  5. Cook quickly to brown the meat all over, stirring continually.
  6. Add the carrot and season with salt and pepper to taste.
  7. Stir in the flour and add the stock and wine. Stir well until simmering and is thickenend enough.
  8. Then cover the casserole dish and cook in the oven for about an hour.
  9. alternatively you could transfer to a slow cooker if you have more time.
  10. You must from time to time check on it and add more stock or wine if required.
  11. The mixture should be reasonably thick but not dry.
  12. While the mince mixture is cooking prepare your mashed potatoe the best potatoes to use are either King Edwards or Maris Pipers they are delicious.
  13. Boil Potatoes in lightly salted water til soft it takes about 20 minutes.
  14. Drain the water from the pan and mash until smooth and lump free.
  15. Add Butter and cream and season well.
  16. Spoon the mince mixture into an oven proof serving dish and spread the mashed potato over the top.
  17. Put the oven temperature up to 200 degrees or gas mark 6 and cook the pie for around 20 to 25 minutes
  18. Until potatoe is nice and brown.
  19. A very tasty dish that is filling and yummy for all the family.
  20. My children absolutely love it.
