Street Vendor Style Sausage and Peppers
There is no need to fight traffic and crowds of people to enjoy authentic vendor style sausage and peppers. This recipe will have you thinking that you are at a big city street vendor, without the hassle.
Ingredients
- 2 lb Italian sausages, hot or sweet
- 3 lbs assorted Bell peppers, cleaned chopped
- 1 large sweet Onion sliced
- 1 large can of Diced tomatoes
- 1 ½ lbs sliced fresh Mushrooms
- 2 cloves Garlic, crushed
- Salt, to taste
- Freshly ground black Pepper
- ½ teaspoon Oregano
- 1/4 cup extra virgin Olive oil
- Slices of good quality Mozzarella or Provolone cheese
Method
- Spread chopped peppers and onions in a large roasting pan
- Cut sausage into 1″ slices & put on top of the peppers. .
- Spread mushrooms on top of sausage
- Pour the tomatoes over peppers and sausage. .
- Sprinkle the oil and the rest of the ingredients over top. .
- Preheat oven to 350-375 degrees
- Bake about an hour, stirring several times during the cooking. .
- Heap mixture onto crusty Italian buns or bread. .
- Place cheese over sausage and pepper mixture and place open-faced under broiler until cheese bubbles. .
- Assemble and enjoy!

I know I would like it if I were a meat eater. It would be good with rice and mushrooms in the place of the sausage too.
