Stuffed Flank Steak
This is a mouth watering flank steak with a moist stuffing that makes it a family favorite. The stuffing takes on the flavors of the seasonings and the juice from the flank steak. Remember to make enough for seconds because your family will be asking for them and with the presentation of roasted new potatoes it is as good as it looks! With quick prep time and easy display and cleanup of one dish it will be your favorite too.

Ingredients
- 2 cups dry stuffing mix or dried bread cubed
- 1 cup hot chicken broth
- 4 tablespoons butter or margarine
- 1 tablespoon of thyme
- 1 tablespoon of sweet basil
- 1 tablespoon rosemary
- 1 tablespoon fennel
- 1 1/2 pounds flank steak, pounded to ½ inch for rolling
- 3 long pieces of cooking string
- 1 medium onion chopped
- 3 cloves of garlic diced
- 8 to 12 new potatoes largely diced
- 2 tablespoons parsley
- 2 tablespoons onion powder
- 2 tablespoons garlic powder
- Olive oil
- 9×13 glass baking dish
Method
- Preheat oven to 350 degrees F (175 degrees C).
- On large cutting board or counter pound flank steak until ½ inch in thickness.
- In a large bowl, combine the stuffing mix or dried bread cubes, hot chicken broth and butter or margarine. Mix in 1 tablespoon each of thyme, sweet basil, rosemary and fennel,1 medium onion chopped and 3 cloves of garlic diced mix well until butter or margarine is melted and then let stand for 5 minutes. Spoon and spread thick layer of the stuffing onto the steak, leaving a 1 inch border.
- Roll up the steak from the long edge making a roll then secure with by tying the string around the top, center and bottom of the roll.
- Take the 9×13 pan and lightly sprinkle olive oil on the pan.
- Place the steak seam side down in lightly oiled 9×13 inch baking dish.
- Place the 8 to 12 new potatoes diced largely around the stuffed flank steak.
- Sprinkle new potatoes with olive oil and remaining seasonings of 2 tablespoons each of onion powder, garlic powder and parsley.
- Bake at 350 degrees F (175 degrees C) for 1 hour, remove from oven and let stand for 5 minutes before slicing the stuff steak.
- Leave in baking dish or move sliced steak to platter, surround steak with roasted potatoes for a delightful presentation.
