Sweet Meatloaf

Meatloaf with Tofu and sweet green pickle relish.

Ingredients

  • One-pound medium or lean hamburger
  • 175 g. (approx. one-half “brick”) Extra Firm Tofu (amount can vary more, or less)
  • One-half medium diced Red Onion
  • One large tablespoon Sweet Green Pickle Relish (or 3-to-4 “restaurant serve” packets Green Relish)
  • One good squirt of ketchup
  • One-half cup breadcrumbs
  • One whole egg
  • Spices/salt to taste
  • (Optional) Grated Mozzarella cheese (topping)

Method

  1. In a large mixing bowl, add the hamburger, diced onion, egg, ketchup, breadcrumbs and green sweet pickle relish.
  2. Coarsely crumble the half-brick of Extra Firm Tofu into the mixing bowl; also adding spices (food spice, salt, cayenne pepper, chili powder etc.) to taste
  3. Kneed until well blended.
  4. Form the mixture into a loaf and place into an aluminum “bread loaf” tin, or glass loaf pan, patting down firmly and evenly to form the loaf and squeeze-out any air pockets.
  5. Bake in the oven at 350 degree F for approximately. 45 minutes. Baking times may vary.
  6. The egg and breadcrumbs will aid making the loaf firm and sliceable.
  7. After 45 minutes in the oven, when firm, you may roll meat loaf out into a flat baking pan and place back into over for a few more minutes to “brown” the undersides.
  8. Alternately, you could use a baker’s torch to “flash flambé” the now upper surfaces to a toasty, brown color.
  9. When sliced, you will see a marbled effect from the coarsely crumbled tofu that may for a meatloaf be disconcerting at first. -But the taste is amazing! The green pickle relish adds a wonderfully unexpected flavor that is both sweet & sour, and sure to please. The Tofu tastes just like the hamburger and spices, is nutritious, healthy, and greatly extends your food dollar for the cost.
  10. Serve hot as-is, with ketchup, or tomato sauce topping. Add coarsely grated or crumbled mozzarella cheese over top just before serving.
